    ขนมถ้วย (Coconut Milk Custard),
    is one of very common,
    traditional
    and delicious coconut milk Thai desserts. The name Khanom Tuay
    literary means "dessert in a bowl"
    in Thai derived from the fact that it is made in
    a small bite size porcelain cup.
    The dessert has  2 layers: the sweet chewy coconut milk based layer on
    the bottom with the thick coconut cream on top.
    Ingredients
    bottom layer
    1/2 cup rice flour
    2 tablespoon arrowroot f
    lour
    200 cc.
    thin
    coconut milk
    50 cc. water
    120 grams palm sugar
    Top layer
    200 cc. coconut milk
    2 tablespoon rice flour
    1/2 teaspoon salt
    Method
    1. If you use canned coconut milk likes me:-), make the thin coconut milk
    by placing 2 tablespoon of coconut milk in the measuring cup then add in
    water until the water level reaches 200 cc.  Then you will get 200cc. thin coconut milk.

    In a mixing bowl mix all the bottom layer ingredient , stir until the sugar
    completely dissolves, set aside. Then with another mixing bowl,
    mix all the top layer ingredient, set aside.

    Line porcelain bowls in a steamer, steam over the high heat for 5 minutes
    until the bowls are hot. Pour in the bottom layer mixture, cover the steamer
    and let cook for 10-12 minutes until is done.
    4. Then pour in the top layer mixture, cover the steamer and let cook for another 5-7 minutes.
    The top layer should be succulent and  soft but not runny. Be careful
    not to overcook
    otherwise the top layer will be too dry.
    5. Remove from heat, serve warm.
    Kanom Gluay (Steamed Banana Cake)
    Khanom Gluay ( Steamed Banana)
    Ingredients
    2 cups rice flour
    1 and 1/2 cup tapioca flour
    1 cup scraped young coconut
    2 and 1/2 cup coconut milk
    2 cups mashed apple banana (1kilogram)
    2 cups sugar
    2 tsp. salt
    Topping:
    3 cups scraped old coconut
    1 tsp. salt
    Banana leaves
    Cooking Instructions:
    1. Mix the two kinds of flour altogether. Gradually add coconut milk and sugar while you knead it.
    2. Then, add 2 tsp. of salt and mashed apple banana. Knead it very well.
    3. Prepare topping by mixing scraped old coconut with 1 tsp. salt.
    4. Cut banana leaves in oval shape 7 x 21 cm. and 6×8 cm.
    5. Place the smaller on top. Put the mix in the middle of the leaves follow by scraped old coconut.
    6. Wrap it nicely and attach it with toothpick.
    7. Steam it in boiling water and use maximum heat for 15 minutes.
    If you don’t like to wrap it with banana leaves, you can pour the mix in a metal tray and steam it for 15 minutes.
    There are a number of different desserts just like this – sometimes we use egg custard, sometimes bananas, sometimes pumpkin. Up to you!
